Etna Chinato 2019

• Built on Federico Graziani's 2019 Etna Rosso from Montelaguardia on Mount Etna's northern slope.
• The Montelaguardia estate is conceived as a vineyard-garden, where vines share the enclosed property with old olive trees and fruit trees.
• The project was developed by Graziani with pharmacist Irene Foti as an Etna interpretation of Italy's historic chinato tradition.

• Etna Rosso is combined with sugar, alcohol and an alcoholic botanical extract.
• The aromatic balance was calibrated with Andrea Maschio at the Bonaventura Maschio distillery.
• The inaugural release was highly limited: 2,000 bottles of 500 ml and 100 numbered three-litre formats.

Cinchona succirubra and cinchona calisaya frame a distinctly Mediterranean infusion of fig leaf, olive leaf, prickly-pear flower, caper, bay leaf, citrus and other botanicals.

Intense, balsamic and Mediterranean. The Etna Rosso base brings red-fruit and volcanic energy, while cinchona supplies a firm bitter line and the local botanicals add leafy, citrus and savory complexity. Sweetness, warmth and bitterness meet in a long, aromatic finish.

• Two named cinchona species create layered bitterness rather than a single-note extraction.
• Versatile service: neat, over ice, with soda and orange peel, in cocktails, or alongside dark chocolate.
