Place & Vines
  • An extreme, high-altitude white-wine project on Mount Etna.
  • The head-trained vineyard was planted in the early 2000s.
  • Native Carricante and Grecanico grow alongside Riesling Renano, Gewürztraminer and Chenin Blanc.
  • The unusual field blend joins alpine freshness to the salinity of the Mediterranean volcano.
Vinification
  • Spontaneous alcoholic fermentation with indigenous yeasts.
  • Malolactic fermentation is blocked to retain acidity, precision and vertical drive.
  • Extended contact with fine lees develops texture without masking the wine's mineral energy.
Aging Style

Eighteen months in stainless steel on the fine lees, followed by six months in bottle. This long, oak-free élevage builds dimension while preserving the blend's brightness, florality and saline line.

Wine Profile

Bright white with greenish hints. Pineapple, white peach and lychee mingle with white musk, rose, lemon granita, lava stone and salt. The palate is harmonious, extremely fresh, fine and vertical, finishing saline and persistent.

Key Factors
  • A singular five-variety blend shaped by an extreme Etna site.
  • No malolactic fermentation preserves a vivid acid spine.
  • Fine-lees aging supplies texture while stainless steel maintains purity.
Technical
  • 30% Carricante / 25% Riesling Renano
  • 25% Gewürztraminer / 15% Chenin Blanc
  • 5% Grecanico
  • Appellation: Terre Siciliane Bianco IGT
Why it matters

An unconventional high-altitude Etna white: intensely floral and mineral, with alpine freshness, Mediterranean salinity and no oak influence.
