Sourced from Altavilla, in the high hills above Alba. The south-facing parcel is rooted in calcareous clay and includes vines up to approximately 40-45 years old, giving Dolcetto unusual depth while preserving its natural energy.
Organically farmed fruit is fermented spontaneously with indigenous yeasts. The wine remains on its skins for about two weeks before gentle pressing, following Bondonio's low-intervention cellar approach.
The wine rests in neutral vat until the following summer. This élevage protects Dolcetto's dark fruit, earthiness and freshness without adding an overt oak signature.
Dark-fruited and earthy, with more concentration and complexity than a typical everyday Dolcetto. The palate remains direct and refreshing, balancing savory depth with the variety's naturally supple frame.
