Fourchaume lies on the right bank of the Serein, facing the area around La Chapelle. Pascal Robin's source is oriented west to southwest, receiving afternoon and evening sun. Brown clay-rich soils with relatively few stones give the wine breadth and intensity.
The vineyard is farmed under lutte raisonnée, limiting treatments and environmental impact, and the fruit is harvested by hand. Cellar work is biodynamically inspired and timed to the lunar calendar while remaining minimally interventionist.
The Chardonnay ferments with indigenous yeasts and is vinified traditionally on its lees in seasoned oak. The barrels are 8 to 12 years old, providing texture and gentle oxygen exchange without a dominant new-oak signature. Élevage lasts 18 months.
Fine aromas of dried fruit, spice and subtle vanilla lead into citrus, white peach and honey. The palate is ample and lightly roasted in tone, yet held in balance by Chablis tension, elegance and a long mineral finish.
