A small parcel in Milly, within the commune of Chablis, planted in 1938 and positioned immediately beside the Premier Cru Les Lys. The north-facing slope and Kimmeridgian limestone-marls preserve freshness, salinity and a distinctly mineral profile.
The old vines are harvested by hand. The parcel completed organic conversion, and recent releases are produced from organically farmed fruit. In the cellar, work follows the lunar calendar with a restrained, biodynamically inspired approach.
Fermentation begins with indigenous yeasts. Half of the wine is raised in stainless steel and half in seasoned oak barrels between 8 and 20 years old. Élevage continues for 18 months on the fine lees with minimal intervention.
Intense and mineral on the nose, opening with white flowers before revealing citrus fruit. The palate is powerful yet precise, with firm Chablis structure, saline energy and a long, clean expression of the old-vine site.
