Vaillons is a left-bank Premier Cru in the commune of Chablis. The vines face primarily southeast, capturing the morning sun, and are rooted in highly calcareous Kimmeridgian marl. The combination favors floral detail, freshness and a precise mineral line.
The vineyard is farmed under lutte raisonnée and harvested manually. The approach seeks ripe, intact fruit while limiting unnecessary inputs. In the cellar, Pascal Robin follows the lunar calendar and intervenes as little as possible.
Fermentation occurs with indigenous yeasts. The wine is vinified and raised entirely on its lees in seasoned oak barrels between 8 and 12 years old. The 18-month élevage builds amplitude and complexity while keeping oak flavor discreet.
A fine, floral nose of white blossoms and linden is joined by a subtle vanilla note. The palate is ample and supple, with citrus, acacia flower and honey, then tightens into a focused, energetic and persistent finish.
