Aging Style

Eleven months undisturbed on lees in French oak, 30% new, followed by six months in steel with the solids. The two-stage élevage builds texture while preserving the vineyard's saline energy.

Wine Profile

Classic Seven Springs salinity and floral perfume lead into citrus, herbs and honey. A firm phenolic frame gives the wine tension and definition, while the extended lees work adds depth and persistence.
