Parussi is a well-known Castiglione Falletto site, facing west and south-west between 270 and 290 meters. The parcel combines vines from approximately 15 to 40 years old within a naturally sheltered hollow.

Soil & Vineyard

A vine-covered hollow of medium-textured soil, loose at the surface and increasingly limestone-rich. Hard whitish-grey and bluish marl appears a little over one meter below. The vineyard is trained on a vertical trellis with traditional Guyot pruning at approximately 4,000 vines per hectare. The published reference yield is 75-80 q/ha.

Vinification

The Nebbiolo is crushed and destemmed, then fermented in temperature-controlled stainless steel. A traditional submerged cap supports a long maceration of four to seven weeks, depending on the vintage, followed by natural malolactic fermentation around 20°C and two to four months in stainless steel.

Élevage

The wine matures for 24 months in large Slavonian oak barrels, then rests for four to six months in stainless steel and a minimum of six months in bottle before release.

Profile

Bright and persistent, with scented wood, mint and ripe fruit, developing resin and sweet spice with bottle age. Full and well built, its acidity and tannic weave gradually resolve into a long-lived balance.
