Ravera is among Novello's most coveted vineyard areas. Sordo's approximately 20-year-old vines face south and south-east at 420 to 450 meters, making this the highest site in the nine-cru collection.

Soil & Vineyard

Loose, rich Tortonian terrain is composed of whitish marls resting on more compact brownish-grey marl. The high elevation preserves freshness despite the sun-facing aspect. The vineyard is trained on a vertical trellis with traditional Guyot pruning at approximately 4,000 vines per hectare. The published reference yield is 75-80 q/ha.

Vinification

The Nebbiolo is crushed and destemmed, then fermented in temperature-controlled stainless steel. A traditional submerged cap supports a long maceration of four to seven weeks, depending on the vintage, followed by natural malolactic fermentation around 20°C and two to four months in stainless steel.

Élevage

The wine matures for 24 months in large Slavonian oak barrels, then rests for four to six months in stainless steel and a minimum of six months in bottle before release.

Profile

Vivid and structured, with mountain hay, autumn leaves, fresh berries, tobacco and sweet spice. Acidity and tannin remain balanced as the wine develops greater harmony, freshness and value in the cellar.
