Vinification
  • Whole grapes were pressed directly, followed by settling in vat.
  • The must was transferred to oak barrels.

  • Jessiaume favors gravity handling, gentle work and minimal intervention.
Aging Style

Aged on its lees for 12 months in the same barrels used for fermentation, with 25% new oak. The wine then spent a further 4-6 months in vat before bottling on March 17, 2025.

Wine Profile

Light lemon-yellow in color, with a lively, fruit-driven nose typical of the appellation. The palate combines complexity and depth with a finely judged balance between mineral tension and richness.
