Produced from the old-vine component of the six-hectare Clos des Varoilles monopole. The domaine began separating this Vieilles Vignes cuvée from the principal monopole bottling with its first 2020 harvest from the site.

Viticulture

The domaine farms biodynamically and uses no synthetic products in the vineyard. Work is directed toward healthy, balanced fruit and an unforced expression of each climat.

Vinification

Hand-harvested fruit is fermented as whole bunches with indigenous yeasts. The domaine works without synthetic cellar inputs or added sulfites and uses gravity rather than pumps.

Élevage

The wine is matured in barrel in the same restrained house style used across the range. The producer does not publish a fixed élevage duration or new-oak percentage for this cuvée.

Profile

Characterful and fresh, carrying the structure of Gevrey-Chambertin Premier Cru with the domaine's supple, whole-bunch signature. The plot's cool freshness is especially valuable in warmer seasons.
