Place & Terroir

A site-specific Chardonnay from Pierreclos in the Mâconnais. Clay-limestone marl gives the wine both breadth and mineral definition, balancing the naturally generous southern Burgundy fruit with a firm, fresh line.

Harvest & Pressing

Simon Faure works with carefully selected fruit and harvests by hand into small crates. Pressing is deliberately gentle, with an emphasis on the heart of the press to preserve purity, energy and an unforced expression of place.

Vinification & Aging

Native fermentation takes place in seasoned oak barrels, with no new wood and no cellar inputs during vinification or élevage. The producer does not publish a cuvée-specific aging duration, so none has been estimated here.

Profile

White peach and fresh almond lead the aromatics, with a delicate flinty note adding lift. The palate gains amplitude without losing direction, combining bright freshness, fine mineral detail and a long, elegant finish.

Pairing & Service

Serve at approximately 10-12°C. Its mix of breadth and mineral precision works with roast poultry, richer fish, scallops, creamy vegetable dishes and mild washed-rind cheeses.
