Simon Faure

Hand-harvested Mâconnais Chardonnay, made in Vergisson, first vintage 2023.

Simon Faure worked as an electrician before turning to wine. In 2023 he made his first harvest in Vergisson, in the southern Mâconnais — around 10,000 bottles, all Chardonnay, made from fruit he buys and presses himself. The Agence Bio register lists vines in his name in conversion to organic certification since May 2025, under the control body Bureau Veritas; the wines are not certified organic.

Grapes are picked by hand into ten-kilo crates, rested overnight in a cold room, then pressed in whole clusters in the manner of Champagne. The juice ferments in older oak barrels with nothing added; racking is kept to a minimum, and a small dose of sulfur is used only at bottling.

The range draws on the hillsides around his cellar: Mâcon-Pierreclos — including the Chef du Petit Vert bottling — Saint-Véran, and Pouilly-Fuissé.
