Sourced from ancient limestone marl in the southern Mâconnais. This deeper, noble terroir gives the range's broadest and most structured expression, while limestone keeps the wine precise and mouthwatering.
Grapes are harvested by hand into small crates and pressed with exceptional gentleness. Only the most refined press fraction is favored, supporting texture and depth without sacrificing clarity.
Native fermentation and extended élevage take place in older barrels, with no new oak and no cellar inputs. The seasoned wood builds dimension and texture without masking the fruit or mineral detail; the exact duration is not published.
Light honey, dried apricot and warm stone emerge with air. The palate is ample and silky yet held in shape by a pure mineral line, finishing long, elegant and salivating. It is the deepest and most age-worthy wine of the four.
Serve at approximately 11-13°C and allow air in its youth. Pair with lobster, scallops, turbot, roast poultry, veal, aged Comté or other dishes that can meet its greater depth and texture.
