  • Certified organic and practicing biodynamic.
  • No hedging or leaf removal; kaolin and chamomile manage heat stress.
Selection & Fermentation
  • Three sorting levels focus on rockier parcels, balanced vigor and small, open bunches.
  • Hand sorted; 10% whole bunch, with remaining berries kept whole and uncrushed.
  • Average fermentation temperature: 24 C.
  • Five punch-downs around the first third of fermentation; 22-day maceration.
Vintage

A wet spring and early summer created mildew pressure. The summer remained moderate, followed by warm days and very cool nights. Harvested October 3, 2023.

Wine Profile

A site-driven Cabernet Franc shaped by calc-schist soils, whole-berry fermentation and measured extraction. The large-format oak regimen builds texture while breathable concrete refines the wine without adding overt wood character.

Key Factors
  • Single-variety wine from a compact 0.9-hectare parcel.
  • Organic and biodynamic farming focused on vine balance.
  • Large-format oak and concrete keep Cabernet Franc precise and transparent.
